Organic Italian fir tree honey : honeydew honey

This rare, highly valued pine tree honey is a variety of honeydew honey harvested in the beautiful forests around Camaldoli monastery in Italy. Several studies show that honeydew honeys have stronger antioxidant properties than the more common floral honeys which you can buy at practically any grocery store . What makes this honey different from floral honey (such as acacia honey for example) is that it’s not made from flower nectar, but from honeydew. Honeydew is what insects feeding on tree sap, in this case fir tree sap, excrete. Bees collect this sugary, gluey product and make honey from it.

 

Honey with strongest antioxidant properties

The antioxidant activities of honeydew honeys are generally attributed to the high levels of phenolic compounds and flavonoids they contain. Antioxidants are important because they are what help to protect us against free radicals. 

This variety has a delicious flavorful, resinous, mildly sweet taste, rich amber color and impressive antiseptic, expectorant, antioxidant and energizing properties.

How to use

As a natural sweetener in tea, or as a remedy for throat aches, for immune support or as a food supplement. Add a teaspoon to a herbal tea or directly into the mouth with throat ache. Can also be used as a skin moisturizing facial mask.

The Ancient Pharmacy of Camaldoli

In the peaceful Casentino forest , close to Florence, the monks of the Monastery in Camaldoli have an ancient tradition of making natural remedies for patients in the hospital of Camaldoli. In an old document dating back to 1048 it is mentioned there were already recipes made for their patients .Today their ancient apothecary still carries these healing ancient natural remedies and supplements, skin and hair care, honey, teas and vitamins. 

Camaldoli was also known by the name Fontebuona because of the high quality of its waters, immortalized by the fountain by Ambrogio Traversari in front of the entrance. The building complex includes the medieval apothecary, the church, and the monastery, built beginning in 1046, when monks founded a small hospital near the temple.
